BRAID FILET ON BED AND MATTRESS APPLE PASTRY WITH CHEESE SAUCE REGADA Pedro Ximenez





INGREDIENTS:

- 1 pork tenderloin
- 6 cloves garlic
- 1 sprig fresh rosemary
- 16 peppercorns
- 4 bay leaves
- 1 teaspoon balsamic vinegar
- 500 gr . Olive Oil (acidity 0.4 °)
- Sal


FOR THE SALSA
- 200 gr. of Mahon cheese
- 50 gr. chicken broth
- 50 gr. Pedro Ximenez wine
- 2 cloves garlic, sliced \u200b\u200b
- 1 teaspoon dried oregano
- 20 gr. olive oil
- Salt and white pepper


FOR BED

-1 pastry sheet
- 1 block Golden
- 30 gr. butter



PREPARATION WITH STEP BY STEP:



Cut tenderloin in half lengthwise into two pieces. Make each piece three cut lengthwise, without cutting on one end and make a braid with the meat. Pass a skewer stick end to end, to keep the braid forma.Poner tenderloin in a pan with oil, unpeeled garlic, pepper, salt, thyme, bay leaf and vinegar. Cook over low heat for 20 minutes, turning halfway through cooking. Turn off heat and cool the meat in oil at room temperature.


Thermomix Prepare the sauce: Place garlic in the bowl with the oregano and olive oil, 6 minutes, temperature and speed varoma 4. Add the cheese into pieces and mix for 30 seconds at speed 3 ½.
